Egg Plant Pizza

The healthy alternative to bagel pizzas! Derived from the zucchini pizzas (which I will also be making this summer, hopefully, if I have enough time before school starts), these beauties are easy, and kid approved. On Monday, I baby sat my cousin, Isabelle and she helped me make the egg plant pizzas. They were our lunch and they turned out fabulous! I had never tried egg plant before, so both Isabelle and myself were playing guinea pigs. It turns out that egg plant is pretty darn good when it comes with something on it. 

here is what you'll need...
~1 egg plant
~pepperoni
~pizza sauce
~cheese
~other pizza toppings

Preheat your oven to 350. Cover a cookie sheet with tin foil or parchment paper. 
Begin by washing the egg plant with cold water, and then set it on a cutting board. Cut the top off the egg plant, and then cut the egg plant into discs. Have a kiddo help you with these next few steps... place the egg plant discs on the parchment paper-covered cookie sheet. Spread some sauce on the egg plant, sprinkle some cheese, add the toppings you like. Bake for 15 minutes, and viola! Egg plant pizzas!

My whole family gobbled them up! Ha. The only part I didn't care were the slices with the seeds. I just took the seeds out of the egg plant and ate it. I didn't like how slimy the seeds were. It was great though! The slices without the seeds. I am going to make other egg plant recipes. I have 4 more egg plants and I need use them up. 
I bet egg plant Parmesan will be amazing!
